Here are a few websites with some history and recipes for nopales.

Some provide nutritional content, some tell of the origins of the cactus/nopales and you can even order nopales through rivenrock.

 

There are many diabetics that swear that eating lots of nopales decreases their blood sugar but I wouldn't quote that as gospel truth.
